Muffins and Squash for the Road!

For my weekend in the country at Kohler Waters Spa in Wisconsin, I packed these gluten-free carrot-coconut muffins, a batch with zucchini and raisins, and this amazing chicken sausage-stuffed acorn squash. After finding the recipes online, I couldn’t wait to bake such spectacular food for my trip! They tasted great – and relatively guilt-free thanks to such nutritious ingredients. I can’t wait to make them again!
