Soup du jour a la Russie “Mushroom Heaven”
With spring around the corner, it’s a great time to enjoy something warm while the cold air lingers. “Mushroom Heaven” soup, prepared in the best Russian traditions, is a great choice when you’re looking for something energizing and not heavy!
1 large potato
1 stem of a green onion
3 cups of vegetable broth
15 oz of champignons mushrooms
2 cups of dairy cream 20% fat
1 garlic clove
Pinch of dried thyme
Salt and pepper to taste
Peel the potato and cut into small pieces.
Chop mushrooms finely with a knife or food processor.
Chop leek and garlic and set aside
Bring vegetable broth to a boil, add leeks and potatoes and cook over high heat for 5 min. Add mushrooms and cook for another 7 min (do not reduce heat).
In a separate skillet, bring the cream, thyme and garlic to boil, stirring constantly to assure it does not burn.
Whisk the potato-mushroom mixture in a blender, gradually adding the hot cream.
Salt and pepper to taste and serve.
